sup tulang campak ala thai


i contemplated about naming this soup 'ala thai' but this is the kind of soup they usually serve in thai restaurants- hot, sourish, the colour is a bit reddish, so let's call it sup tulang ala thai, shall we? ;)

as for the campak, it is because i pretty much dumped everything that i like into the pot together with the ribs- sup bunjut and the four spices that comes together with it, celery stalk, stalk of leek with roots (cleaned, of course. can't find spring onion), crushed tomatoes and chillies, and a dash of black pepper. let the ribs boil for a while first before adding other ingredients, then remove the scum floating at the surface. i then fry until fragrant grounded onion, garlic, ginger, extra 4 spices in a separate pan and then add them to the pot. i let them boil using very low fire for almost 2 hours, seasoning and tasting it a few times (amateur cook here) and done! before eating, garnish with usual condiments- celery leaves (typical malaysian daun sup is not available here), leeks, bawang goreng, chillies and a squeeze of lemon (no lime). dah siaaap, boleh makan. the meat was so tender, kudos to metro. their meat never disappoint.

i was very happy with the result, but next time i will add lemongrass and some galangal to the boil, and coriander to the garnish. the soup will be more delicious i think ;)
